Carbon negative coffee

Last year, we visited Jardines del Edén, a farm as beautiful as its name suggests. Nestled in the hills of Quindío, its volcanic soil, steady rainfall, and cool microclimate create the perfect conditions for extraordinary coffee. Led by Felipe Arcila, a fourth-generation grower pushing the boundaries of coffee processing, the farm is a hub of innovation.

This lot features Sidra, a rare variety with Ethiopian heirloom roots. A cross of Typica and Bourbon, it’s known for its wine-like acidity, layered sweetness, and delicate botanical notes—capturing the vibrancy of this pioneering farm in every sip.

The EF2 fermentation really comes through—that extended process gives it a funky, almost wine-like sweetness I wasn't expecting. Sidra's a cultivar I'd read about, and at 1900 masl it's got this delicate balance that made my morning cup feel fancy without trying too hard. Definitely the most interes

Sipped this as my first pour-over of the morning and the extended natural fermentation really shows—it’s got this deep, almost wine-like sweetness with a clean finish. The Sidra cultivar at 1900 masl makes for a bright, complex cup that I’ve already gone back to twice today. Definitely worth the ext

The EF2 fermentation on this Sidra is wild—I get a bright green apple tartness that lingers way past the last sip. Brewed it as a pour-over at 1900 masl altitude and it’s easily the most complex cup I’ve had this month.
