Colombia, Ají 2

This bag from Finca La Guaca is the first Ají landrace I've tried and the anaerobic wash really lets that unique cultivar shine. The brightness is intense but balanced, and at 1798 meters you can feel that high-altitude clarity in every sip. I've already ordered another.

First cup I brewed, the aroma alone told me this wasn’t your average bag—the Ají landrace cultivar gives it this wild, fruity brightness I haven’t found elsewhere. José Hernán’s anaerobic process at 1798 meters really shows in the clean, almost wine-like finish. Already ordered a second bag.

The anaerobic wash really comes through—there's a soft, almost wine-like depth that lingers even after it cools. I brewed it at 1798 meters' worth of patience, but honestly, the Ají landrace cultivar makes it worth every careful pour.
